Gluten Free Peanut Butter Oatmeal Chocolate Chip Cookies

16 cookies

Ingredients

  • 1 cup peanut butter (or other nut butter)
  • 1 cup coconut sugar
  • 2 eggs
  • 1/2 cup gluten free old-fashioned rolled oats
  • 1/4 tsp salt
  • 1/2 cup flour
  • 1 tsp baking soda
  • 1/4 tsp cinnamon 
  • 1/2 cup chocolate chips

Directions

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, mix all ingredients together by hand, but do not over mix.
  3. Form dough into 16 cookies (depending on preferred size) and place on a baking sheet.
  4. Bake for 10-12 minutes.


Notes

For Pitta, use sunflower butter instead. Note that it can turn a green-ish color when baked.
