Vegan Cashew "Ricotta"

Soak cashews in fridge overnight.

Ingredients

1 cup raw cashews
1 tbsp. extra-virgin olive oil
1/2 cup finely diced onion
1/2 cup finely diced shallot
1 tbsp freshly squeezed lemon juice
1 1/2 tbsp nutritional yeast
pinch of sea salt

Directions

1. The day before preparation, place cashews in a bowl, adding enough cold water to cover them. Cover and soak overnight in the refrigerator.
2. Heat oil in a sauté pan over medium heat. Add the shallot and onion and sauté until softened. (Approximately 3 minutes.)
3. Drain and rinse the cashews and place them in a food processor fitted with a metal blade.
4. Add lemon juice, nutritional yeast, and salt. Process until smooth. (Approximately 3 minutes.)
5. Add shallot and onion and process for another minute.

Notes

This ricotta can be used in many other recipes, including homemade pasta!
